Alternative to cheese?
So like all the veggies in Tokyo, I visited the annual veg fest held at Yoyogi Park last month. The all-vegan feast was amazing, although some items were way over priced.
A popular food stand every year is the Tsubu Tsubu Cafe (located in Waseda, Nagano, and a new one in Kagurazaka! www.tsubutsubu.jp), where they create their dishes mainly from various millets of Japan. This year my choice was the mochi-awa naan pizza, a multi-grain naan topped with fresh tomato sauce, corn—and non-dairy “cheese”, made from millet.
Honestly, I wouldn’t call it cheese, but it definitely gives the pizza a creamy texture and richness, which makes it perfect for those avoiding the real stuff.
This inventive cheese, one of their signature items, is actually easy to make at home.
You need: 1 cup mochi-awa (millet), 3 cups water, 1 1/2 teaspoon natural salt
1. Rinse the millet in water and drain.
2. Boil the water in a pot and add the millet and 1/2 teaspoon salt. Stir well on high heat.
3. Once it gets creamy, put the lid on the pot and leave it on low heat for 15 min.
4. Turn the heat off and add a teaspoon of salt. Mix well and let it steam with the lid on for 10 min.
